Cinnamon Rice Pudding (Arroz con Leche)
Cinnamon Rice Pudding, also known as Arroz con Leche, is a warm and comforting dish that transforms simple pantry ingredients into a creamy dessert. Long grain rice is simmered in low-fat milk until thick and tender, then flavored with cinnamon, vanilla, and your choice of fruit such as raisins, cranberries, apricots, plums, or apples.
Perfect for serving warm after a meal or as a satisfying snack, this recipe provides a delicious way to enjoy whole grains while keeping added fat low.

Instructions

  1. Wash hands with soap and warm water.
  2. If using dry rice, cook according to package directions.
  3. Combine milk and cooked rice in a medium saucepan.
  4. Bring to a boil over medium heat, stirring occasionally.
  5. Reduce heat to low and add fruit and cinnamon.
  6. Simmer about 30 minutes until the milk is absorbed and the pudding is thick but still creamy.
  7. Stir in sugar and vanilla and cook 2–3 minutes longer.
  8. Remove from heat and serve warm.

  • 2/3 cup dry long grain rice (or 2 cups cooked rice)
  • 3 cups 1% low-fat milk
  • 1/2 cup fruit of choice (fresh or dried)
  • 1 teaspoon cinnamon
  • 2 tablespoons sugar
  • 1 teaspoon vanilla

Optional

  • 1/4 teaspoon nutmeg
  • Pinch of black pepper
