Ingredients
For the Salsa
- 4 peaches, chopped
- ½ medium red onion, diced
- 2 cloves garlic
- 1 cup cilantro, chopped
- 1 jalapeño, chopped
- 1½ tablespoons lime juice
For the Chicken
- 4 (6-ounce) pieces chicken (breasts, thighs, or drumsticks)
- 2 tablespoons Southern seasoning blend (see seasoning blend page)
Instructions
- Wash hands with soap and warm water.
- Preheat oven to 400°F.
- In a medium bowl, stir together chopped peaches, red onion, garlic, cilantro, jalapeño, and lime juice. Cover and refrigerate until ready to use.
- Arrange the chicken on the center of a pan and drizzle with oil. Sprinkle 1 teaspoon of the Southern Blend on each piece of chicken and rub in seasoning.
- Bake:
- 10–15 minutes for chicken breasts
- 25–30 minutes for chicken thighs
- 15–20 minutes for drumsticks
- Turn chicken over and sprinkle the remaining seasoning mix over the chicken. Bake for an additional 15 minutes or until chicken reaches an internal temperature of 165°F.
